Grandmother's Apple Pie
THE RECIPE OF IGINIO MASSARI
ALL PURPOSE PEELER, MIXING BOWLS, WHISK, FLEXIBLE SPATULA, STAINLESS STEEL RING SET, SILICONE BRUSH, SUGAR-CASTER, POT-HOLDERS, GROSS MESH SIFTER, GAUGING CUPS, SHORT KNIFE, MANDOLIN, PITCHER.
300 g of Eggs
300 g of Sugar
2 g of Salt
1 Vanilla bean
½ teaspoon of Cinnamon
20 g of Rhum
350 g of Melted Butter
8 g of Yeast Powder
300 g of Sifted Flour
300 g of Diced Apples
In a planetary mixer with whisks, blend and puff up eggs, sugar, salt, vanilla and rum at speed 3 for 15 minutes.
Add in the flour, previously sifted twice, the cinnamon and the baking powder.
Blend in the melted butter and incorporate the diced apples.
Pour the mixture into the stainless steel ring placed on a silicone matt.
Cook it at a temperature of 180 °C for 30/32 minutes.
Remove from the mold and dust with vanilla-flavoured icing sugar.
